These one-tray garlic roasted potatoes with chicken are perfect for busy weeknights. Toss everything in the oven to enjoy an all-in-one-meal. You can even prepare the veggies ahead of time for quick cooking.

Ingredients
- 1.5 lbs Little Potatoes, sliced
- 1/4 cup olive oil
- 1/2 head cauliflower, cut into florets
- 2 to 3 chicken breasts, cut into strips
- 1 tsp oregano
- 1 clove garlic, chopped
- 1 tsp capers
- 3 sprigs fresh parsley, chopped
- 1 serano chilli, sliced (optional)
- 2 Tbsp red wine vinegar
Instructions

Step 1
Preheat oven to 450 °F.

Toss together Little Potatoes with all other ingredients (except for red wine vinegar) on a baking sheet. Place in oven.

Roast for 30 minutes (turning pieces over a couple of times for even cooking).

Remove from oven, drizzle with vinegar, and serve.
