Ingredients

  • 1.5 lbs Little Potatoes, sliced
  • 1/4 cup olive oil
  • 1/2 head cauliflower, cut into florets
  • 2 to 3 chicken breasts, cut into strips
  • 1 tsp oregano
  • 1 clove garlic, chopped
  • 1 tsp capers
  • 3 sprigs fresh parsley, chopped
  • 1 serano chilli, sliced (optional)
  • 2 Tbsp red wine vinegar

Instructions

  • Step 1

    Preheat oven to 450 °F.

  • Step 2

    Toss together Little Potatoes with all other ingredients (except for red wine vinegar) on a baking sheet. Place in oven.

  • Step 3

    Roast for 30 minutes (turning pieces over a couple of times for even cooking).

  • Step 4

    Remove from oven, drizzle with vinegar, and serve.
