This easy side dish is ideal for busy weeknights requiring just 10 minutes of active cooking time. Serve these orange Dijon Little Potatoes as a hot side or chilled for an unexpected twist on classic potato salad! Can be served hot or cold.
- Baking sheet
- 1.5 lbs Little Potatoes
- 2 Tbsp olive oil
- 2 Tbsp Dijon mustard
- 2 Tbsp (vegan) mayonnaise
- 2 Tbsp fresh orange juice
- 1 Tbsp maple syrup
- 1 Tbsp hulled hemp seeds
- 1/2 Tbsp orange zest
Heat oven to 425 °F.
Place the halved potatoes in a bowl, and toss them with the oil until evenly coated.
Place on a parchment-lined baking sheet and bake in the oven for 30 minutes, or until fork tender.
Combine Dijon mustard, vegan mayonnaise, orange juice, maple syrup, hemp seeds, and orange zest in a bowl.
Transfer potatoes to a bowl and top with dressing. Stir and serve.
