Steam Little Potatoes for a healthy dish that is ready in a snap. Instead of chives or parsley, you can experiment with rosemary, tarragon, basil or mint.
- Large saucepan
- 1.5 lbs Little Potatoes, halved
- 2 Tbsp fresh flat-leaf parsley, chopped
- 6 chives, chopped
- 4 tsp olive oil
- 1/4 tsp kosher salt
- 1/8 tsp black pepper
Fill a pot with one inch of water and put a steamer basket inside. Place the potatoes in the steamer basket and bring water to a boil. Cover and cook until potatoes are tender, 10 to 15 minutes.
Transfer potatoes to a large bowl. Add parsley, chives, oil, salt and pepper and toss gently. Serve hot.
