Ingredients

Poke Bowl:

  • 1 package A Little Lemon and Garden Herb™ Microwave Ready Little Potatoes
  • 1 grapefruit, sectioned
  • 1 avocado, sliced
  • 1 carrot, julienned
  • 1/2 cucumber, cubed into 1/4-inch pieces
  • 4 green onions, thinly sliced
  • 8 oz sushi grade tuna
  • 1/4 cup sesame seeds
  • 2 Tbsp extra virgin olive oil

Dressing:

  • 4 Tbsp soy sauce
  • 2 Tbsp sesame oil
  • 4 Tbsp white wine vinegar
  • 2 Tbsp sugar
  • 2 tsp ginger, minced
  • 2 Thai chilies, minced

Instructions

  • Step 1

    Cook potatoes as per package instructions. Once cooked, cut in half and sprinkle with seasoning pack.

  • Step 2

    Prepare all fruit and vegetables and have ready for assembly.

  • Step 3

    Cut tuna into two four-ounce pieces. Place sesame seeds on a plate and gently press tuna into sesame to coat and create a crust. On high heat, let pan heat up until just about to smoke. Quickly add olive oil to pan, and sear tuna for 30 seconds a side. Remove from pan and slice.

  • Step 4

    Combine all dressing ingredients and whisk until well incorporated.

  • Step 5

    To assemble: Start building the bowl with the potatoes in one spot, working around the bowl, add all the ingredients and top with dressing.
