Get ready for delicious skillet potatoes, Italian sausage, and kale simmered in a red wine sauce in this potato casserole.
- Large pan
- 2 Tbsp butter
- 3 mild Italian sausages, sliced
- 3 cups Little Potatoes, sliced in 1/2-inch pieces
- 4 cups kale, chopped
- 3 cloves garlic, chopped
- 1/2 cup red wine
- 1/4 cup water
- 1 lemon, zest and juice
- 3/4 cup Parmesan, grated
- (To taste) salt and ground pepper
In a large pan, melt the butter and fry the sausages and little potatoes for five minutes or until they start to brown on all sides.
Add the garlic and red wine. Cook five minutes.
Add the kale and water. Season with salt and pepper, cover and cook for eight minutes.
Add lemon, Parmesan and more salt and pepper if desired. Serve.
