Ingredients

  • 1.5 lbs Little Potatoes
  • 2 Tbsp olive oil
  • 1 Tbsp fresh thyme, chopped
  • 1 Tbsp fresh rosemary, chopped
  • 1 Tbsp fresh sage, chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper, freshly ground

Instructions

  • Step 1

    Preheat the oven to 400 °F.

  • Step 2

    Toss together the potatoes, olive oil, herbs and salt and pepper until well coated.

  • Step 3

    Place in a single layer in a roasting dish and roast for 30 minutes until crispy and potatoes are creamy and tender inside.

  • Step 4

    Serve immediately.
