  • 1 lb Little Minis™
  • 2 cans mixed beans, drained and rinsed
  • 1 can diced tomatoes
  • 2 Tbsp olive oil
  • 1 red onion, diced
  • 1 red pepper, chopped
  • 2 garlic cloves, minced
  • 1 Tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1 cup vegetable stock
  • (To taste) salt and pepper

Toppings:

  • 1 cup shredded cheese
  • 1/2 cup sour cream

Instructions

  • Step 1

    Add all ingredients except for cheddar cheese and sour cream to a slow cooker, combine, and cook on high for four hours.

  • Step 2

    Serve the potato chili hot and top with cheddar cheese and sour cream.
