Ingredients
- 1 lb Little Minis™
- 2 cans mixed beans, drained and rinsed
- 1 can diced tomatoes
- 2 Tbsp olive oil
- 1 red onion, diced
- 1 red pepper, chopped
- 2 garlic cloves, minced
- 1 Tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1 cup vegetable stock
- (To taste) salt and pepper
Toppings:
- 1 cup shredded cheese
- 1/2 cup sour cream
