Ingredients
- 1 package Microwave Ready Little Potatoes
- 1 Tbsp extra virgin olive oil
- (To taste) salt and pepper
- 3/4 cup pizza sauce
- (To taste) pepperoni slices, chopped
- 1/4 cup black olives, sliced (can use pre-sliced canned olives)
- 6 mozzarella string cheese sticks
Instructions

Step 1
Preheat oven to 400 °F.

Cook Little Potatoes according to package directions.

Once cool enough to handle, slice Little Potatoes lengthwise.

Place potato halves cut side up on a foil-lined baking sheet.

Assemble the Pizza Toppings:
Spoon approximately two teaspoons of pizza sauce over each potato half.

Sprinkle evenly with chopped pepperoni.

Place an olive near the center of each potato half to form a ‘nose’.

Pull off thin strips of mozzarella cheese and lay them across the potatoes to form ‘bandages’ (it’s okay if the cheese hangs over the edges slightly, it will melt into the shape of the potatoes.)

Cut the remaining olives in half lengthwise and place two halves above the ‘nose’ to form eyes.

Bake for 3 to 4 minutes or until the cheese slightly melts.
