Preparation
Preheat oven to 400°F (200°C).
Toss the potatoes with canola oil and season with salt, pepper, paprika and cayenne. Bake cut-side down on a parchment-lined baking sheet. Bake for 25 minutes, until crisp and tender. Meanwhile, make the sauce. Mix the remainder of the ingredients (in dipping sauce) until well combined.
To serve, place on a small platter and drizzle with sauce – or place sauce in a small bowl for people to dip.
