Ingredients

  • 1 lb Little Potatoes
  • 1 bunch broccoli, cut into large pieces
  • 12 large shrimp, peeled and deveined
  • 1 1/2 lemons, juiced
  • 3 Tbsp fresh thyme, chopped
  • 2 Tbsp olive oil
  • (To taste) salt and pepper

Instructions

  • Step 1

    Before prepping the veggies and shrimp, place potatoes in a large microwave-safe bowl and microwave on high for five minutes.

  • Step 2

    Chop the broccoli and peel the shrimp.

  • Step 3

    Add broccoli and shrimp to bowl once potatoes are steamed.

  • Step 4

    Add remaining ingredients and evenly coat.

  • Step 5

    Build skewers and grill for 10 to 15 minutes, until shrimp is cooked through.
