The Instant Pot is an incredible tool to help make meals that are bursting with flavor and so easy peazy to make. Just toss in the ingredients, and let the Instant Pot do the work to make this easy recipe for butter chicken!
- Instant Pot
- 1 Tbsp olive oil
- 1 onion, diced
- 3 to 4 garlic cloves, minced
- 2 tsp fresh ginger, minced
- 2 tsp ground coriander
- 2 tsp garam masala
- 2 tsp turmeric
- 1 tsp salt
- 1 tsp paprika
- 1 tsp chili powder
- 1/2 tsp cayenne (optional)
- 3 cups Little Potatoes, halved
- 1 (28 oz) can tomato sauce
- 1 cup chicken stock or water
- 2 lbs chicken breast or thighs, cut into one-inch pieces
- 2 Tbsp butter
- 1/2 cup heavy cream
Set Instant Pot to Sauté. Once hot, add olive oil. Sauté onions until translucent, 2 to 3 minutes. Add garlic and ginger and sauté for additional 30 seconds.
Add all spices and stir continuously for 30 seconds or one minute.
Add potatoes, diced tomatoes, chicken stock (or water if preferred) and cubed chicken.
Secure lid and set Instant Pot to Pressure Cook on high. Set a timer for 10 minutes.
Once finished, carefully release pressure and let sit for five minutes.
Remove the lid and stir in butter. Once butter is incorporated slowly, set in heavy cream.
Serve over rice and garnish with fresh cilantro.
