Ingredients

  • 1 package A Little Hot Honeyâ„¢ Microwave Ready Little Potatoes
  • 1 lb large shrimp, peeled and deveined
  • 1 zucchini, sliced (or any fresh veggies you have in your fridge!)
  • 1 can fresh corn
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • (To taste) salt and pepper
  • (For serving) lemon wedges
  • (For base) cooked rice or mixed greens

Instructions

  • Step 1

    Cook Little Potatoes according to package directions and set aside.

  • Step 2

    Preheat skillet to medium-high heat.

  • Step 3

    In a large bowl, combine shrimp, zucchini, corn, olive oil, garlic powder, salt, and pepper.

  • Step 4

    Add to skillet and cook until vegetables are tender and shrimp is cooked.

  • Step 5

    Add rice or greens to bowl and top with shrimp, veggies, and Little Potatoes.
