These Little Potato Halloween Monster Eyeballs will be a hit with your little ghouls for a snack after school or for a Halloween party!
- Large pot
- Slotted spatula
- 1.5 lbs Little Potatoes
- (To grease pan) cooking spray
- (To coat) cooking oil
- (To taste) salt and pepper
- (To taste) pepperoni sticks
- (To taste) sliced cheddar cheese singles
- (To taste) sour cream
Place potatoes in a pot of salted boiling water, and simmer for 15 minutes. Preheat oven to 450 °F. Drain potatoes and place on a baking tray sprayed with cooking spray. Let the potatoes cool enough to handle and then smash with a slotted spatula. Drizzle with olive oil and season with salt and pepper. Bake for 15 minutes or until crispy.
Meanwhile take a pepperoni stick and roll a cheddar cheese slice around the pepperoni. Slice in half-inch slices.
Top each potato with sour cream, a pepperoni slice, and a cheese slice. Serve warm.
