Ingredients

  • 1.5 lbs Little Potatoes
  • 1/2 lbs green beans, steamed and halved
  • 1 shallot, minced
  • 1/3 cup fresh tarragon, chopped
  • 1/4 cup pecans, chopped

Dressing:

  • 2 Tbsp red wine vinegar
  • 1/2 Tbsp Dijon mustard
  • 1 Tbsp maple syrup
  • 1/4 cup olive oil
  • (To taste) salt and pepper

Instructions

  • Step 1

    Pierce Little Potatoes and microwave for seven minutes or until tender.

  • Step 2

    In a small bowl, make the dressing by combining red wine vinegar, Dijon, maple syrup, olive oil, salt, and pepper.

  • Step 3

    In a serving bowl, combine warm potatoes, green beans, shallot, tarragon, and pecans.

  • Step 4

    Pour dressing on the salad and toss to combine.
