Craving Mediterranean food? You’ll love this savory side dish of Greek-inspired Little Potatoes doused a generous squeeze of lemon juice.
- Large bowl
- Large baking dish
- 2 lbs Little Potatoes
- 2 Tbsp extra virgin olive oil
- 1/3 cup fresh lemon juice
- 1/4 cup chicken or vegetable stock
- 1/2 tsp granulated garlic
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 Tbsp lemon zest
- 1 tsp parsley, chopped
- 1 tsp rosemary, chopped
- 1 tsp tarragon, chopped
Preheat oven to 400°F. Slice the potatoes in half and add to a large bowl.
Add in the remaining ingredients and stir everything well to combine.
Transfer the lemon herbed potatoes to a large baking dish and cover with foil. Bake for 35 minutes.
Remove from oven and remove the foil, then stir the potatoes, and return to the oven for an additional 15 minutes.
Stir the potatoes once more and then put the oven on broil at 500°F and broil the potatoes for three minutes.
Garnish with a generous squeeze of lemon and enjoy!
