Preparation
Heat frying pan over medium heat. Add oil and fry potatoes for 15 minutes or until crispy and cooked through.
Once potatoes are cooked, remove from heat and stir in olives and roasted red peppers.
Serve and top with crumbled goat cheese and fresh parsley.
