Made right in our Microwave Ready tray, this easy and kid-approved potato salad is perfect to make for any picnic, beach trip, or backyard cookout.

Ingredients
- 1 package A Little Lemon & Garden Herb™
- 1/4 cup Greek yogurt
- 2 Tbsp mayonnaise
- 1/4 cup sun-dried tomatoes, finely choped
- 2 tsp tomato paste
- 1 Tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 small garlic clove, crushed
- 1 pinch pepper
- 1 handful fresh herbs of your choosing
Instructions

Step 1
Prepare potatoes according to the package instructions. Remove from microwave and cool to room temperature. Slice in half or use a fork to slightly crush potatoes.

In a small bowl, combine Greek yogurt, mayo, sun-dried tomatoes, tomato paste, red wine vinegar, Dijon mustard, honey, garlic, and season to taste with pepper. Mix to combine all ingredients until well incorporated and smooth.

Add the cooled potatoes to the bowl with the dressing and gently toss to ensure potatoes are well coated.

Refrigerate the potato salad for at least 30 minutes to allow the flavors to meld. Mix in fresh herbs just before serving.
