A simple hearty meal of roasted veggies, sausages, and little potatoes are a great one-tray speedy weeknight dinner.
- Baking sheet
- 1.5 lbs Little Potatoes
- 10 oz Ukranian or Polish sausages, sliced
- 1 large red pepper, diced
- 1 bunch asparagus, each piece cut into three or four pieces
- 2 Tbsp olive oil
- 1 tsp thyme
- (To taste) kosher salt and freshly ground pepper
Preheat oven to 425 °F.
Place the little potatoes, peppers and asparagus on a large rimmed baking sheet. Sprinkle on the oil, thyme and salt and pepper and toss. Add the sausage.
Bake for 30 minutes, or until potatoes are tender and starting to brown. Serve immediately.
