- Large bowl
- Parchment paper
- Baking sheet
- 1.5 lbs Little Potatoes
- 1 Tbsp vegetable oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 to 2 Tbsp fresh parsley, chopped
Preheat oven to 400 °F.
In a large bowl, toss Little Potatoes with oil, salt, and pepper until coated.
Spread on a rimmed baking sheet lined with parchment paper in a single layer and bake for 30 minutes or until tender.
Sprinkle with parsley and serve.
