  • 1.5 lbs Little Yellows™, diced into 1/2-inch cubes
  • 1 to 2 Tbsp neutral oil, for cooking
  • 1 1/2 tsp smoked paprika
  • 1 tsp turmeric
  • 1/2 tsp ground coriander
  • 2 tsp cumin
  • 1 tsp all-purpose seasoning
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • (To taste) salt and pepper
  • 1 lb beef, minced
  • 1/4 cup parsley, packed and chopped
  • 1/4 cup all-purpose flour
  • 1/4 cup water
  • 20 to 30 six-inch spring roll pastry sheets

Instructions

  • Step 1

    Dice potatoes into 1/2-inch cubes and soak in cold water while you prepare the filling.

  • Step 2

    Heat oil in a large pan over medium heat. Add paprika, turmeric, coriander, cumin, and all-purpose seasoning.

    Cook for one minute to bloom.

  • Step 4

    Add chopped onion and cook for 3 to 5 minutes until softened. Stir in garlic and cook for 1 to 2 minutes until fragrant.

    Add minced beef and drained potatoes. Cover and cook for 15 to 20 minutes over medium heat until potatoes are tender, adding two tablespoons to 1/4 cup water or stock if needed.

    Season with salt and pepper to taste, remove from heat, and stir in parsley. Let cool slightly.

    In a small bowl, mix flour and water to form a paste.

    On a clean surface, lay a pastry sheet flat. Fold in half diagonally to form a triangle. Seal from the center to one corner with the flour paste. Fold one pointed end to the other to create a cone shape, sealing edges with more paste.

    Fill the cone with two spoonfuls of filling, pressing to remove air pockets. Seal remaining edges with paste. Repeat until all filling is used.

    Heat 2 to 3 inches of oil in a deep saucepan to 350 °F (175 °C). Fry samosas in batches for 4 to 6 minutes, turning occasionally, until golden and crisp.

    Drain on paper towels. Let cool slightly before serving.
