  • 1.5 lbs Little Potatoes
  • 3 Tbsp cooking oil
  • 1 lb ground beef
  • 1 package your favorite taco seasoning
  • 1 cup lettuce, shredded
  • 1 cup cheddar cheese, shredded
  • 1/2 cup tomatoes, diced
  • 1/2 cup sour cream for serving
  • 1/2 cup salsa for serving

Instructions

  • Step 1

    Place Little Potatoes on a grill or oven-safe tray. Add two tablespoons of oil to the tray. Toss until well coated.

  • Step 2

    Place Little Potatoes on the grill or in the oven. Cook for 30 to 45 minutes or until tender, stirring occasionally.

  • Step 3

    While potatoes are cooking, heat a large skillet with the remaining tablespoon of oil over medium heat.

  • Step 4

    Add ground beef and break apart with a spatula. Cook until meat is browned and no pink remains.

  • Step 5

    Once meat is cooked, turn heat to low and stir in the taco seasoning. Cook for a few minutes, until seasoning is well integrated.

    Remove from heat and set aside.

    Prepare the lettuce, tomatoes, and any other veggies you might want to add.

    Remove potatoes from oven or grill once fork tender. If using Oven or Grill Ready Little Potatoes, add seasoning.
