Preheat oven to 425 °F or grill/campfire to medium-high heat . Place 4" x 12" pieces of foil on a baking tray if using oven.

Fold edges up and over and pinch ends together to seal. Bake for 30 minutes or until potatoes are tender (prick with a sharp knife and potatoes should have some give).

Carefully remove and open foil packets (some steam will release). Top potatoes and chorizo with a cod fillet per foil packet. Bake for about 10 minutes or until cod is flakey and cooked through.
