This Cheesy Chicken and Potato Bake is a delicious and easy one pan or foil pack dinner. Wholesome, almost completely hands off, and oh so tasty!
- Aluminum foil
- Baking sheet
- 1 package Any flavor Roast or Grill Ready Little Potatoes
- 1 lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 2 cups (about 1 large head) broccoli florets
- 1/2 cup cheddar or mozzarella cheese, grated
Preheat oven to 425 °F. Remove top of Roast or Grill Ready package and seasoning packet (set aside) from potatoes.
Cut chicken breasts lengthwise (down the middle from top to bottom so you end up with two long pieces per breast).
Toss chicken, olive oil, potatoes, and seasoning packet together in potato foil dish. Place in oven and bake for 20 minutes. Add broccoli at this time and toss with potatoes and chicken. Return to oven and bake for another 15 minutes. If you run out of space in the potato package use a foil lined baking sheet.
Add grated cheese on top of chicken, potatoes, and broccoli and bake for 10 minutes more until chicken has reached an internal temperature of 165 °F and potatoes are fork tender.
