Forget boring cheese and crackers, give your guests something to talk about with thsese cheesy Creamer potatoes. This appetizer can be prepared ahead of time, then quickly assembled and baked prior to serving.

Preparation

A day or two before the party, cook the potatoes until fork tender and place in the fridge.

In a stand mixer, cream all of the cheeses together with the olives and peppers. Any selection of cheeses can be used, but avoid cheddar because it becomes very oily when it melts.

To serve, pre-heat the oven to 350ºF (175ºC). Cut a slit in each potato like you would for a baked potato—not the whole way through. Stuff each potato with about two teaspoons of mixture.

Place on a baking tray and bake for 10 minutes. Enjoy!
