  • 1 package any flavor Microwave Ready Little Potatoes
  • 6 to 8 eggs
  • 1/2 cup ham, cooked and diced (or bacon!)
  • 1/2 cup cheddar cheese, shredded
  • 3 to 4 Tbsp milk
  • 2 to 3 green onions, sliced
  • Pinch salt

Instructions

  • Step 1

    Cook Microwave Ready Little Potatoes according to package directions. Stir in seasoning and allow to cool slightly.

  • Step 2

    Halve or chop the cooked Little Potatoes and separate between4 lightly greased mugs (around 14 to 16 oz).

  • Step 3

    Whisk eggs slightly and split between mugs, along with ham, cheese, milk, onion, and salt.

  • Step 4

    Microwave separately on high in 40 second intervals, stirring the first two times (while there is still uncooked egg in the mug) until eggs are completely set.

  • Step 5

    Serve!
