Favorite Foodie Thanksgiving Recipes

Thanksgiving is such a wonderful holiday that everyone adores. Why?
Because we all celebrate it.
Because it’s about the harvest, good food and sharing.
Because it’s a chance to gather dear friends and family around the table.
Really, what’s not to love?

We’ve gathered some of our favorite things to cook for Thanksgiving for you to add to your holiday repertoire.

Roasted Veggie Thanksgiving Bowl

Roasted Veggie Thanksgiving Bowl - The Little Potato Company

Not everyone eats turkey, or meat for that matter, and this is the entrée you want to wow those guests. This dish is magazine worthy, and is a pretty selection packed with crunch and color. Mashed Boomer Gold Creamers provide the silky texture, complemented by caramelized roasted Brussels sprouts, garlic-broccoli, sweet squash and earthy carrots. The whole is then sprinkled with pecans and topped with cranberry sauce and vegan gravy. You may never go back to the bird!

Smashed Potatoes with Hazelnuts

Smashed Potatoes with Hazelnuts

Hazelnuts are synonymous with fall. This recipe takes ho-hum, run-of-the-mill mashed potatoes and enlivens the classic side with the crunch and distinctive flavor of grilled filberts. Creamy Boomer Gold Little Potatoes boiled and mashed, fresh chives, butter and milk round off the dish. Press the mixture into a mold before serving to elevate the table appeal.

Vegan Thanksgiving-Style Smashed Potatoes

Thanksgiving Style Smashed Potatoes - The Little Potato Company

Vegan or no, these smashed potatoes are gorgeous, festive, and seasonal. They resemble little jewels and will look artsy on your handsome holiday platter. Boiled, smashed and crispy-roasted Blushing Belles drizzled in vegan soy and miso-infused mushroom gravy with a dollop of tart cranberry sauce, sprinkle of fresh-cracked pepper, and fresh thyme leaf garnish. Serve alongside your main event.

Roasted Apple Pumpkin Soup with Potatoes

Harvest time pumpkin pie is traditional, but there are other ways to weave the iconic orange squash into your feast. Try this soup recipe for a tasty warm-up appetizer on a crisp fall Thanksgiving eve. This satisfying puree mixes sweet, aromatic Empire apples with mild pumpkin and velvety Blushing Belle Little Potatoes, lending a touch of white asparagus flavor. Add a dash of curry powder for zing, then pile the Creamers in the center of the bowl and pour the soup around, dotting with fresh chopped Italian flat leaf parsley. Optional: Swirl in some cream or sour cream for an elegant finish. (Note: Any McIntosh-style apple will do.)

And while we’re on the subject, here’s your handy Thanksgiving dinner checklist, how to set the celebratory table properly (aptly called “What the fork?”) and, perhaps most important of all, what to do with all those leftovers? Happy feasting!
