Holiday potato alternatives

We’ve all grown up with that big bowl of mashed potatoes on the holiday dinner table, standing dutifully by all the other dishes decked out in their holiday finery: sparkling cranberries, creamy indulgent veggies, pools of luscious brown gravy, the limelight only shared by the golden, succulent, juicy turkey met with soft gasps of appreciation and delight when ushered lovingly to the table. Poor mashed potatoes. The obligatory scoop only a foundation for the trimmings to be heaped on top of them.

This year, why not elevate your potato offering to star-status as well, using one of LPC’s delicious, creamy, melt-in-your mouth varieties? Best of all, they go from bag to pot to plate in approximately 15 minutes, so even when simply dressed with butter and fresh herbs they’re a knockout and a cinch to prepare.

FESTIVE RECIPE IDEAS

Crushed Blush Potatoes

Packed with flavour and the creaminess of blue cheese, these potatoes would be outstanding alongside your Christmas ham. Set some of the mixture aside (before adding the arugula), then reheat Boxing Day morning for a scrumptious brunch dish with eggs.
2 pounds BLUSHING BELLE potatoes (coarsely peel about half of the skin and discard)
3 ounces crumbled Gorgonzola cheese or other soft blue cheese
1/2 cup pecans, toasted, chopped
1/4 cup extra-virgin olive oil
2 cups (packed) baby arugula
Place potatoes in large pot. Pour enough cold water over to cover; salt generously. Bring to boil. Reduce heat and simmer until potatoes are just tender, 15 to 20 minutes. Drain. Return potatoes to pot. Using large wooden spoon, coarsely crush potatoes in pot. Add cheese, nuts, and oil. Stir in arugula and toss to blend. Season to taste with salt and pepper. Transfer to bowl and serve.

Roast Potatoes with
Herbs and Capers

A delicious, easy to prepare dish that’s perfect for holiday entertaining. Try experimenting with different herbs, citrus zest, and other

 

seasonings to make the dish the perfect complement to your holiday menu.
2 pounds TERRIFFIC TRIO potatoes, halved
1/4 cup extra-virgin olive oil
3 sprigs fresh rosemary, each broken into 4 pieces plus more for garnish
3 large garlic cloves, halved
1 1/2 teaspoons coarse kosher salt
3 tablespoons drained capers
Preheat oven to 400°F. Arrange potatoes in single layer on large rimmed baking sheet. Drizzle with oil; sprinkle with rosemary pieces, garlic, and salt; toss to coat. Roast until potatoes are tender, stirring every 15 minutes, about 45 minutes total. Mix in capers. Roast until flavors blend, about 5 minutes longer. Season with pepper. Transfer to bowl. Garnish with rosemary sprigs.

Swedish Potatoes

Decadent with cream, these potatoes don’t even need gravy. Our thanks to LPC fan Cindy Lee Kavanagh for submitting this delicious recipe!
2 pounds BABY BOOMER potatoes
1 medium onion, ½ inch dice
1 litre whipping cream
1t salt
¼ t black pepper
Preheat oven to 350 degrees. Place the onions and the potatoes in an


oven-proof baking dish. Pour enough whipping cream over potatoes to cover (you may not need all of the whipping cream). Season with salt and pepper. Bake in oven for one hour or until fork tender.

POTATO BREEDING: FROM LAB TO FIELD TO PLAT

Though the potato has been a common agricultural crop worldwide for centuries, it has evolved countless times over generations to better suit the needs of its particular growing environment, yield, quality and resistance to disease. It may be universally recognized as the world’s comfort food, but the potato is by no means a one-size-fits-all crop.
