1 2 lb bag your favourite LITTLE POTATO COMPANY potatoes
1 c frozen peas
¼ lb bacon, sliced ½” wide
½ c red onion, ½” dice
1 garlic clove, minced
¼ c blue cheese dressing or favourite creamy dressing
salt and cracked black pepper to taste
Slice the potatoes into ½ inch rounds. In a medium saucepan, cover the potatoes with water and simmer until fork tender, about 10 to 15 minutes. Drain and set aside in a large bowl. Fry the bacon until just crisp, drain the fat, then add the onions and garlic and cook until just soft, about 3 to 5 minutes. In the meantime, rinse the peas under cold water to defrost; drain. Add the peas to the bacon and onion mixture. Add the bacon, onion and peas to the potatoes, toss well, then dress with the blue cheese dressing, making sure that everything is coated.
