Swedish Potatoes

1 2 lb bag BLUSHING BELLE potatoes
1 medium onion, ½” dice
1 L whipping cream
1 t salt
¼ t black pepper
Method:
Preheat oven to 350 degrees. Place the onions and the potatoes in an oven-proof baking dish. Pour enough whipping cream over potatoes to cover (you may not need all the whipping cream). Season with salt and pepper. Bake for 1 hour or until fork tender.
