Tarragon Potatoes

1 2 lb bag your favourite LITTLE POTATO COMPANY potatoes
1 T fresh tarragon, chopped
2 T butter
½ c cheddar cheese, shredded
salt and pepper
Method:
Preheat oven to 350 degrees. In a large saucepan, cover the potatoes with water and simmer until done, about 15 to 20 minutes. Drain and let cool. Cut the potatoes in half and toss with butter, tarragon, salt, pepper and cheese. Pour into an oven-proof baking dish, cover and bake for 15 minutes.
