1 2 lb bag your favourite LITTLE POTATO COMPANY potatoes,
sliced ¼” thick
4 medium zucchini, sliced ¼” thick
½ c feta cheese, crumbled
¼ c extra virgin olive oil
salt/pepper
2 t dried oregano
1 t dried mint
1 t lemon juice
½ c water
Preheat oven to 350 degrees. Place the sliced zucchini and potatoes in a large oven-proof baking dish. Drizzle with the olive oil, salt, pepper, mint, oregano and lemon juice, then top with crumbled feta cheese. Drizzle the water evenly around the dish. Bake for 40 minutes or until potatoes are fork tender.
