1 2 lb bag your favourite LITTLE POTATO COMPANY potatoes
8 garlic cloves, peeled and left whole
2 T extra virgin olive oil
1 t thyme
1 t kosher salt
½ t black pepper
In a large bowl, toss the potatoes with the garlic, olive oil, salt, pepper and thyme. Place in a slow cooker, cover and cook on high setting for 3 to 4 hours or until fork tender.
