1 2 lb bag your favourite LITTLE POTATO COMPANY potatoes
1 t kosher salt
2 t chopped fresh rosemary
½ t fresh cracked black pepper
2 T extra virgin olive oil
Preheat oven to 350 degrees. Place potatoes in a medium-sized saucepan, cover with cold water and simmer until potatoes are tender, about 15 to 20 minutes. Drain and place potatoes on a baking sheet lined with parchment paper. Crush the potatoes with the bottom of the saucepan, just to break the skin and flatten them a bit. In a small bowl, combine the remaining ingredients and drizzle over the potatoes. Bake for 20 minutes or until crispy.
