1 2 lb bag your favourite LITTLE POTATO COMPANY potatoes, quartered
2 medium carrots, chopped
2 celery stalks, chopped
8 c water
1 large onion, cut in ½” dice
2 T butter
6 T all-purpose flour
2 c homo milk
Salt and pepper to taste
In a large stock pot, cover the potatoes, carrots and celery with water; bring to a boil and simmer until tender. Drain and reserve the cooking liquid. In the same pot, melt the butter and sauté the onion until soft, about 5 to 7 minutes. Whisk in the flour and cook for 2 minutes longer, then slowly whisk in the milk and continue to cook until it begins to thicken. Add the cooked potatoes, onions, carrots and celery. .

Slowly add the reserved cooking liquid to reach desired thickness. Simmer for 15 minutes, stirring often to prevent sticking. Serve hot
