1 2 lb bag your favourite LITTLE POTATO COMPANY potatoes, cut into 1/8” thin slices
3 T butter
1 c yellow onion, thinly sliced
1 green pepper, cut into 1” dice
1-2 jalapeños, or more, thinly sliced
salt and pepper to taste
Place a large non-stick frying pan over low heat, melt the butter then add the potatoes, onions, pepper and jalapeños, in layers, repeating if necessary. Season with salt and pepper to taste. Cook, stirring frequently, until the potatoes are soft and crispy. Serve immediately.
