Oven-Roasted Potatoes

1 2 lb bag your favourite LITTLE POTATO COMPANY potatoes
¼ c olive oil
2 T fresh lemon juice
2 t garlic powder
1 t dried marjoram
1 t dried oregano
1 t dried rosemary
1 t dried thyme
¼ t salt
¼ t black pepper

Method:

In a large bowl, toss all ingredients to combine and pour mixture into a large sealable plastic bag. Place the bag in the refrigerator for up to 12 hours (the lemon juice will keep the potatoes from turning brown). When ready to cook, preheat oven to 375 degrees. Spread the potatoes onto a baking sheet lined with parchment paper and bake for 50-60 minutes, turning occasionally.
