Skinny Roast Potatoes

1 2 lb bag your favourite LITTLE POTATO COMPANY potatoes
2 T olive oil
1 t smoked Spanish paprika
salt/pepper to taste
Method:
Preheat oven to 350 degrees. Cut potatoes in quarters; place a large bowl with remaining ingredients and toss, making sure to coat the potatoes evenly. Spread the potatoes onto a baking sheet lined with parchment paper and roast for 30 minutes, or until fork tender.
