Hungarian Potato Parikash

1 T canola oil
1 2 lb bag your favourite LITTLE POTATO COMPANY potatoes
1 large yellow onion, chopped
2 T Hungarian paprika
½ green pepper, sliced
½ large tomato, sliced
1 c water
1lb spicy kielbasa sausage (or your favourite variety), sliced
1 t salt

Method:

Place a large saucepan over medium heat, add the oil and sauté the onion until soft, about 5 minutes. Add the paprika, sauté for 1 minute, taking care not to scorch the paprika. Add the potatoes, tomatoes, pepper, water and salt; stir to combine. Reduce heat to simmer and cook for 10 minutes. Add the sausage and cook for another 10 to 15 minutes or until potatoes are fork tender and sausage is hot.
