1 2 lb bag your favourite LITTLE POTATO COMPANY potatoes
1 medium yellow onion, sliced
½ lb fresh mushrooms, sliced
2 T olive oil
1 t salt
½ t black pepper
In a medium bowl, mix all ingredients together. Pour onto a sheet of aluminum foil, wrap into a packet and place on the bbq on the top rack so they don’t burn.
Cook for 30 to 45 minutes or until fork tender.
