
This recipe is a much healthier alternative to potato chips and makes a perfect snack for watching hockey, football or any other sport. It’s also great for when company unexpectedly drops in. It’s easy to make and goes well with any type of dip – onion, artichoke, even hummus! Remember, you don’t have to make everything from scratch. There are a lot of great store-bought dips available.
2 lbs BLUSHING BELLE POTATOES, or your favourite LPC potato variety
2 tablespoons canola oil
1-2 teaspoons kosher salt
1/2 teaspoon coarsely ground black pepper
Place the potatoes on a parchment-lined baking sheet and bake in a 400°F (200°C) oven for 30 minutes. Remove and cool the potatoes until you are able to handle them.
With a large spoon, coffee cup or your hand, crush the potatoes until you break the skin and slightly flatten them out. Drizzle the potatoes with canola oil and season them with salt and pepper. Put them back in the oven for 20 minutes, turning once, so that they are golden brown.
Serve hot with forks and dipping sauce. They are also great at room temperature.
