
Like most of my recipes, you can use this recipe as a base foundation from which to build your own culinary creation. You can easily adjust this recipe to suit you or your family’s tastes. Have fun experimenting! You can also try the suggested add-ins at the bottom.
2 lbs of your favourite LPC potato variety
1/4 cup green onions, chopped
1/2 cup celery, finely diced
3 tablespoons cider vinegar
3/4 cup ranch dressing
2 tablespoons parsley, chopped
Kosher salt
Pepper
Put potatoes in a large pot and fill it with cold water. Bring water to a boil, and then gently simmer the potatoes for 15 to 20 minutes, or until fork tender. Drain. When potatoes are cool enough to handle, cut them in half (or quarters if you prefer).
The next step is key: while the potatoes are still warm, toss them with the vinegar and a little salt and pepper. This helps bring out the flavour of the potato. Then, chill the potatoes until cold. Add the remaining ingredients, toss gently and serve.
