2lb baby potato, par boiled/cut in half or quaters
4 slices bacon, ¼” slices
Salt/pepper
¼ c diced green onion
Handfuls mixed greens
1/3 c dressing(any vinegarette based dressing)
In a large skillet pan fry the bacon till crisp, remove drain, and discard all but 1 T of bacon fat.
Add the potatoes, and pan fry the potatoes till light golden brown, add the chopped green onion, and the dressing and toss till well coated and hot, then add the greens and cook till just wilted, top with bacon pieces, serve by itself, or with grilled meat, and can be served at room temperature
