Grilled lemon potato skewers

Skewering the potatoes makes them easier to turn on a barbecue. The potatoes are par-boiled first then grilled for that smoky barbecue flavour. Try serving this recipewith grilled chicken or fish.

3 tablespoons sweet chili sauce
2 teaspoons finely grated lemon zest
2 tablespoons lemon juice
salt and freshly ground pepper
24 to 30 ORGANIC RED AND/OR YELLOW POTATOES
6 bamboo skewers, soaked in water (or use metal skewers)

Combine sauce, zest, juice and salt and pepper in small bowl; set aside.

 


Grilled lemon potato skewers

Cook potatoes in a large pot of salted water for about 12 minutes or until almost tender; drain.

Thread potatoes onto skewers. Cook on heated greased barbecue grill over medium low heat with lid closed. Brush with lemon mixture. Cook for about 10 minutes, turning occasionally and brushing with lemon mixture, until cooked and grill marks appear. Makes 6.
